I make these every week so I can have a high energy snack at work. Ravyn asked for it, so I'm sharing it (: They're sooo easy to make. [under the cut]
Ingredients
6oz Quaker Porridge Oats (all other oats SUCK for flapjacks)
6oz Unsalted butter
3oz Brown/Demarara sugar
3oz Golden Syrup (Don't have to be precise, I just lump in 3 heaped table spoons as it's sticky as hell)
Heat oven to 170C and grease up your dish/baking tray with unsalted butter. The one I use is a pie dish that's about 6 x 8 inches and about two inches deep, so nothing massive.
Gently melt the butter, sugar and syrup together in a saucepan. When all the butter is melted, turn the heat off (the sugar will melt in the oven later).
Chuck in your oats! Omnomnom. Mix thoroughly, and if the mixture is too "wet", add more oats and stir until they are all coated, and that no moisture is left in the saucepan. It should be the consistency where they can bind together. If it's too soggy/gloopy, you will have a failjack at the end.
At this point you can add nuts/raisins if you like, but I'm a purist (;
Put your mixture into your dish and really press it into the corners and flatten it down with the back of your spoon. (LOL ignore the giant knife 8D'')
Put it in the oven and bake for 30 minutes (Check after 20 minutes just to make sure it's doing okay. I cook it at a lower heat than recommended, for longer, to reduce the chance of burning it. Haven't burned any batches so far doing it this way).
After 30 mins, get a small knife and cut the flapjacks into desired slices. The mixture will still be very soft, but I do this so that the air can get into the flapjacks more so the bottoms can dry out. It helps to wiggle the knife as you cut to open them up a little.
Put it back in the oven for 10 minutes.
Done, and your flapjacks should now be a subtle golden brown on the top! Re-score your cut lines if you need to and leave it to rest/harden for half an hour or more. You want to eat them when they're not warm.
