You can, yes, but your deer will become a default stag whenever it grows up. It will have brown and white fur, a white maskless face, and elk-ish antlers (maybe with flowers if you had them as a fawn).
To stay a fawn, you have to click the "play as a fawn" option in the menu every time you log in.

You will look like a nameless

You will look like a nameless when you become full grown, that is until someone casts a spell upon you.

If you'd ever want to play as a fawn again there is an alternative in the options that will turn you back into a fawn anytime you want to.
