There is absolutely no requirement for you to create a character. You are free to do what you want. I, for example, play pretty much out of character. ((though the lines are a bit blurred tbh))
From my experience I can tell you that even though I play OOC I have no trouble interacting with IC characters. Especially if you're still a fawn players are usually understanding towards them, because they're new players. There's all sorts of characters out there, friendly and not-so-friendly, and as long as you're aware that their actions are not directed at you personally you should be alright. You can always check the map to see whether the deer you're playing with is IC or OOC. And if there's a character event going on like a fight or a birth or something they might not want to stop to dance with you. But most people are relatively considerate anyways.
As for boundaries, there really aren't any. It's probably good to be understanding of the play styles of others and just have some basic respect, aka no harrassment when a deer clearly says 'no' multiple times. But really, you're free to do whatever.
