Well, we have people from all kinds of timezones, so you have to bear that in mind. Different people will be on at completely different times. For me, I think I usually see the most people during the early/mid afternoons and into the early evenings (for reference, I'm in the Eastern US timeone). But don't quote me on that, since I haven't really paid too much attention to all that recently.
If you're just interested in the number of deer in the forest at one time, one thing you could do is watch the forest map during different times of the day, since it shows you the number of deer online at the time. (If you want a map that has some additional functions, here's this awesome one, too)

There aren't as many "dead" times as there used to be, but late US Eastern time around 11 pm-is it starts to quiet down, as well as mornings. Mid afternoon-late evening eastern time there's the most people on, I've noticed. As always weekends are more lively as well for the most part.
