Note: I'll be bumping this until Rut begins Oct. 4th. Feel free to ignore if you've already read it.
Fighting:
Usually a large group of deer surrounding two fighting stags. The stags will find no interest in anything or anyone else. There will usually be a lot of noise involved. This is fighting.
Sparring:
Can occur in flower patches where more actions are available to SPAR. Sparring is practice and usually no anger is involved. If your deer approaches two sparring males, the males will usually take a polite bow to you, and continue sparring.
Leave them alone if the signs of sparring occur.

edit: The Rut is coming up when males become competitive. There will be no violence when this happens. There will be a lot of "fighting" stags around. Please, don't try to break up the fight.... thanks.
