1) Find a hill with the desired height
2) Run and press H/Spacebar to jump continually. Don't stop running or jumping, otherwise you'll fall down. You will be flying.
3) When you've come to the point you want to stop, quickly press Esc twice, so that the menu comes up and disappears again, so you'll be air-sitting.
4) Don't use the Emote-Bar to stand up! You need to set one of your hotkeys to either 'listen' or 'dance' and use that. Otherwise you'll fall down.

There are also certain "forest seams" in the forest which will make you fall down even though you're flying, like between the First Forest and The Birch. You can avoid them though by finding out where those seams are.

To fall asleep in the sky and not falling down, you simply need to keep the menu open.

Navigating while flying takes some practice, sometimes it looks like you're on the right spot from one perspective, but when you turn your camera you see you're actually completely off.
To make navigating easier, there's also a small trick-- When you're sitting in the sky, you can stand up and quickly press H/Spacebar to make a jump forward. Then quickly press esc again to sit down.
