From what I've seen of those particular areas. Undercity isn't too badly touched, just updated to the design of Flying Mounts. There's some new areas there for brand new Undead starting out. Namely a new little quest hub but from what I've seen in TB's videos nothing too terrible.

Apparently... Murlocs have gone EXTINCT in the Expansion... OH GOD FINALLY >_> XD
The MAJOR one to be changed, from what I've seen, is the Tauren Starting Zone which is UTTER CHAOS! Literally, due to Cairen's death [Which apparently comes from a 'disagreement' between him and Garrosh, ending in a Fight that kills the Tauren Chieften] and well of course Deathwing's all might KABOOM into the world.
