Have to start at a high point, keep running and keep jumping. Hitting Esc to access the game menu will keep you in the air.
Might take a bit of practice. I'll usually use me mouse to guide and spacebar to keep jumping. Gives easy access to hit Esc then.
It's an odd little glitch, but it's loads of fun! You can also dance and do other stuff in the air this way!
First, you find a spot that's the height you want to end up at, like a hill or something. Then, you start running and jumping from that place -- do not stop running, and do not stop jumping. What you'll find is that, as long as you keep spamming the jump button as you run, you won't lose altitude: you'll be moving at the height you started at to begin with, instead of landing on the ground.
You'll have to move this way to where you want to be. When you're at the point you want to be floating at -- like that tree the deer in the picture -- you quickly press the 'Esc' key. This will cause your game to pause, you'll be sitting and you'll be floating at the height you were, too.
What you do not want to do, unless you want to try again, is press the 'Esc' key right away. Using the action bar (you can access it inside the menu, I am pretty sure) or better yet, hot-keys, you want to dance. This moves your deer into a standing position. Once you've 'stood up' that way, you can exit the menu, and you'll remain in the air. From there, you can sit down in your perch (standing up without dancing will cause you to float back down, though), keep dancing, whatever!
...You just can't turn.
